Can HPP extend chilled shelf life?

For suitable products, HPP can reduce microorganisms involved in spoilage and help extend shelf life. The achievable result must be established for the particular food and storage conditions; a published example is not a promise for your product.

Juices, smoothies, dips and prepared foods

Start by describing what currently limits the product. Is it a microbiological result, flavour, colour, texture, packaging performance or a customer specification? That distinction helps shape a useful investigation.

For juices and smoothies, discuss the formulation and pack format. For dips and hummus, include recipe variants and the quality customers expect. Review packaging suitability with the processor before arranging trials.

Does a longer life pay?

Is HPP a route to ambient storage?

Do not assume it is. Conventional non-thermal HPP does not reliably remove bacterial spores. Many applications require refrigeration or other validated preservation controls.
